OLIVE SALAD 
3 (14 oz.) jars salad olives, drained
1 pt. calamata (black) olives, pitted
5 to 6 med. cloves of garlic, minced
2 bell peppers, chopped
1 sm. head celery, chopped (leaves included)
1/4 c. parsley, chopped
8 green onions, chopped (green included)
3 tbsp. Italian seasoning, crushed
3 sm. raw carrots, grated
3/4 to 1 c. olive oil

Mix all ingredients together and marinate at least 24 to 48 hours before serving.
