CARROT CAKE | |
3 c. (fine) grated carrots, put in cup lightly 2 c. plain flour 2 c. sugar 1 1/2 c. cooking oil 2 tsp. baking soda 2 tsp. salt 2 tsp. cinnamon 4 eggs Mix flour, sugar, soda and salt. Pour oil over dry ingredients. Blend in 1 egg at a time. Add carrots. Bake at 350 degrees in 3 layers. FROSTING: 1 box powdered sugar 8 oz. pkg. cream cheese 1 stick butter 1 tsp. vanilla 1 pkg. coconut (fine) 1 c. nuts |
