ZUCCHINI CASSEROLE 
3 tbsp. butter
2 tbsp. flour
1 sm. green pepper
3 tomatoes
1 med. onion
1 tsp. salt
1 tbsp. brown sugar
1 bay leaf
2 cloves
Zucchini to cover
Lg. casserole pan
3/4 c. cracker crumbs
1/2 stick butter

Melt butter, add flour. Chop up and add to butter, green pepper, tomatoes, onion. Cook slowly for 5 minutes. Add salt, brown sugar, cloves, bay leaf. Slice thin the zucchini. Place in large casserole. Cover with above mixture. Sprinkle top with cracker crumbs. Dot with butter. Bake in 350 degree oven for 30 minutes.
