ZUCCHINI - RICE CASSEROLE 
2-3 c. cooked rice
6-7 sm. zucchini, sliced, cook slightly
1 1/2 c. sour cream
1 1/2 c. cottage cheese
1 sm. onion, chopped (or minced dry)
Fine herbs
7 oz. chopped green chilies
1 lb. Jack cheese, grated

Layer. Spread cooked rice in bottom of 13 x 9 inch casserole. Spread green chilies. Sliced zucchini. 1/2 of grated Jack cheese. Mix sour cream, cottage cheese, onion, fine herbs. Top with rest of cheese. Bake at 350 degrees for 35-40 minutes.
