SCRAMBLED EGGS WITH SHRIMP | |
1/3 lb. shelled shrimp 1/2 tsp. cornstarch 1/2 tsp. salt 1/2 tsp. ginger juice 1 c. oil 5 eggs 2/3 tsp. salt 1 tbsp. chopped green onion Devein shrimp, mix with a little salt, rinse lightly. Drain and pat dry with paper towels. Mix shrimp with cornstarch, salt and ginger juice, marinate for about 10 minutes. Heat pan over high heat, heat oil until 300 degrees. Add shrimp and stir fry about 10 seconds until shrimp change color and are medium rare, stirring constantly. Remove and drain. Pour off all but 5 tablespoons drippings from pan. Beat egg lightly and add salt and shrimp. Reheat pan until drippings get hot. Add green onion and fry briefly. Pour in egg mixture and stir fry over medium heat until eggs are scrambled; stirring constantly. Remove to plate and serve while hot. |
