SOFT PUMPKIN COOKIES 
1/2 c. butter
1 1/2 c. sugar
1 can pumpkin or squash (for 1 pie)
1 egg
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. baking powder

Cream butter and sugar in large bowl; add egg and vanilla. Beat until fluffy. Combine dry ingredients and add alternately with pumpkin. Drop by teaspoon on lightly greased cookie sheets. Bake at 350 degrees for 18 to 20 minutes until lightly browned. Cool on racks. 4 dozen.
