OLD FASHIONED SOFT PUMPKIN
COOKIES
 
2 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. softened butter
1 1/2 c. granulated sugar
1 c. Libby's solid pack pumpkin
1 egg
1 tsp. vanilla extract

In medium bowl, combine flour, baking powder and soda, salt, cinnamon, and nutmeg, set aside.

In large mixer bowl, cream butter and sugar. Add pumpkin, egg, and vanilla. Beat until light and creamy. Add dry ingredients, mix well. Drop by tablespoons on greased cookie sheet. Bake at 350 degrees for 15 to 20 minutes or until golden brown. Cool. Drizzle with glaze.

GLAZE:

In small bowl, combine 2 cups powdered sugar, 3 tablespoons milk, 1 tablespoon melted butter, and 1 teaspoon vanilla extract. Blend until smooth. Drop on cookies.

Can add 1 cup raisins, 1 cup chopped nuts, 1 cup uncooked rolled oats, and 1/2 cup crushed pineapple, drained.
