MUSHROOM RICE 
1 c. raw rice
1 can beef broth
1 stick butter
1/2 c. onion, diced fine
1/2 c. celery, diced fine
1/2 c. bell pepper, diced fine
1 small jar sliced mushrooms (undrained)

Combine all ingredients in a 2-quart casserole.

Bake at 350°F for 45 minutes.
