CAJUN PORK JAMBALAYA 
1 c. cubed Cajun sausage
1 c. lean cubed pork
1/2 c. onion, finely chopped
1 tbsp. bell pepper, finely chopped
1 celery stalk, finely chopped
2 chopped shallots with tops
2 c. rice
2 1/4 c. water
1 tbsp. oil
Salt to taste

Put cubed pork in heavy cook pot with oil. Cook about 10 minutes or until tender. Add onion and celery, cook until transparent. Add sausage, cook all until "light brown". Add green pepper and shallots, cook another 5 minutes. Add 2 cups washed rice, salt. Can be put in rice cooker with cold water at this point, or covered pot; cook as you usually cook rice.
