SEAFOOD SOUP | |
2 or 3 slices bacon, cooked & crumbled (save 1 tbsp. grease in pan.) Add: 1 med. chopped onion 2 med. diced potatoes 2 med. carrots, diced or sliced 1 lg. celery rib, chopped Cook and stir a few minutes. Add 2 cups water, bring to boil, simmer 10 to 15 minutes. Add 1 (16 oz.) package frozen fish (sole, flounder, turbot) and 1 can of drained shrimp or clams or both (handful of larger shrimp is great but not necessary). Mix 1 ounce package of buttermilk Ranch dressing to 2 cups of milk, stir to dissolve powder mix. Add to soup. Heat to boiling, simmer briefly. Top with crumbled bacon. This is good stuff. NOTE: Clam juice may be used for any equal portion of water. |
