DOUGHNUTS 
1 egg
1 c. sugar
3 tbsp. shortening, melted
1 c. milk
4 tsp. baking powder
1/2 tsp. cinnamon
1 tsp. salt
3 1/2 c. flour

Beat egg, sugar, melted shortening and milk together. Add dry ingredients mixed together. Add enough more flour to make dough firm enough to roll. Knead 1/3 of mixture at a time on floured board, roll to 1/2 inch thick and cut with doughnut cutter. Don't destroy the centers. Fry both the doughnut and the center cutouts in deep shortening heated to 365 degrees, turning once. Drain on absorbent paper.
