STUFFED ACORN SQUASH 
2 acorn squash
1 sm. chopped onion
Pinch of oregano
1 lb. sausage
1 green pepper, chopped
Cheese (any type)

Half acorn squash; remove seeds. Butter inside and place on cookie sheet, skin side up. Bake at 350 degrees for 20-30 minutes, or until skins are tender. Saute onion and green pepper in skillet. Add sausage and oregano. Brown well. Fill squash with sausage mixture and top with cheese. Return to oven until cheese melts.
