ZUCCHINI SQUASH MUFFINS 
2 1/2 c. flour
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 1/2 c. sugar
2 eggs
1 c. oil
1 tsp. vanilla
1 1/2 c. grated zucchini squash
Nuts

Beat eggs well, add sugar and beat again. Add oil then zucchini and vanilla. Add dry ingredients and nuts. Mix until most of the lumps are gone. Grease muffin tins or use paper baking cups. Bake 30 minutes at 350 degrees. Makes 18 to 24 muffins, depending on size of tins you use.
