VEAL PARMIGIANA 
2 egg whites, beaten
1/4 tsp. pepper
1/2 c. Italian bread crumbs
1 tbsp. grated Parmesan cheese
1 lb. thin veal cutlets, cut into 6 servings
Vegetable cooking spray
1 (8 oz.) can tomato sauce
1/2 jar prepared spaghetti sauce
2 (1 oz.) slices part skim Mozzarella cheese

Mix egg and pepper; beat with a wire whisk. Combine bread crumbs and Parmesan cheese. Dip veal into egg mixture and dredges in bread crumb mixture. Saute veal in a large skillet coated with cooking spray until golden brown.

Put in shallow baking dish. Pour tomato sauce and spaghetti sauce over veal, Top with cheese slices. Bake at 350 degrees for 15-20 minutes. 6 servings.
