BAKED CHICKEN SALAD 
2 1/2 c. cooked chicken, chopped
1 c. diced celery
2 tbsp. onion, minced
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. pimento, chopped
1/4 tsp. chives
1/4 c. mayonnaise
2 c. potato chips, crushed
Grated or shredded cheese

Mix all ingredients together except potato chips and cheese. Place in casserole dish. Cover with cheese; sprinkle potato chips on top of chicken salad. Bake at 350 degrees for 15-20 minutes (until cheese melts). Makes 3-4 servings.
