MACADAMIA COOKIES 
2 1/2 cups all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups packed brown sugar
2 large eggs, slightly beaten
3/4 cup macadamia oil or light olive oil
1 tsp. vanilla extract
1/2 tsp. lemon extract (optional)
2 cups white chocolate chunks
1/2 cup chopped macadamia nuts

Preheat oven to 350°F.

Sift together flour with baking powder and salt. Set aside.

In a separate bowl combine brown sugar with eggs. Add oil and stir until well-combined. Add vanilla and optional lemon extract and stir in. Last, add white chocolate and macadamias, and stir until just folded in. Drop by the spoonful onto a greased or lined cookie sheet.

Bake in a preheated 350°F oven for 10 to 12 minutes, or golden brown on top.
