DOUBLE CHOCOLATE COOKIES 
2 1/4 c. flour
1 tsp. baking soda
1 c. butter, softened
3/4 c. firmly packed brown sugar
1/4 c. sugar
1 pkg. instant chocolate pudding
1 tsp. vanilla
2 eggs
1 (12 oz.) pkg. chocolate chips
1 c. chopped nuts (optional)

Mix flour with baking soda. Combine butter, the sugars, pudding mix and vanilla in large mixing bowl; beat until smooth and creamy. Beat in eggs. Gradually add flour mixture; stir in chips and nuts. Drop from teaspoon onto ungreased cookie sheet two inches apart. Bake at 375 degrees for 8 to 10 minutes. You can substitute chocolate chips and pudding with butterscotch chips and butterscotch pudding.
