FLUFFY PANCAKES 
Dry Ingredients:

1 1/4 cups all-purpose flour
1/4 cup sugar
2 tsp. baking powder
1 tsp. baking soda
pinch salt

Liquid Ingredients:

1 1/4 cups milk
1/4 cup oil or 1/2 stick melted butter
1 egg
1 teaspoon vanilla

In a medium bowl, combine dry ingredients. In a measuring cup, combine liquid ingredients.

Pour liquid ingredients into dry ingredients and mix to combine.

Preheat frying pan. When frying pan is hot enough, a drop of water will "dance" and sizzle away.

With a good non-stick frying pan, you won't have to use cooking spray. If not, use cooking spray or a small pat of butter.

Pour a soup ladle full of batter into the frying pan.

Flip when the top has bubbles and a half inch of the edge looks dry.

Cooks Note: Variation - For extra fluffy pancakes, separate the egg and whip the white until soft peaks form. Buttermilk may be also be used instead of milk - reduce baking powder to 1 1/2 teaspoons and 1/2 teaspoon baking soda. Add 1/2 teaspoon vanilla, if desired.

Makes about eight (8-inch) pancakes.

I am almost 60 years old. Finally, I have found a pancake recipe that is everything I have ever wanted. This recipe is light and fluffy and stands up to butter and syrup. I LOVE IT. I followed the original instructions except that I made it the night before and left it in the fridge overnight. I just stirred it lightly while the griddle warmed up. I recommend this recipe highly. Been making pancakes from mixes for 25 years, most recently with the high-end brands like Stonewall Kitchen. Figured I'd try something new and make them from scratch. This recipe is quite simple to follow -- I did the optional egg-white whipping and vanilla -- and honestly did not take that much more time than doing from a mix. Maybe a couple extra minutes. The result was, hands down, the best pancakes I've made in 25 years. Huge, fluffy, tasty, gorgeous pancakes. Outstanding. I only wish I'd discovered this recipe all those years ago!

Excellent recipe! I've tried several, this is the best so far. I used about 1/8 cup less milk and a smidge extra vanilla the second time, perfect! Whipping the egg made a big difference in consistency.

If your pancakes aren't fluffy, make sure your pan is hot enough when you start, and make *sure* you wait till the middle bubbles AND the edges are dry to flip!

The taste is very good- really like the addition of vanilla. But they came out flat (flat as a pancake). I'll have to try whipping the egg whites next time.

Whipped the egg and used an iron skillet to get half inch thick fluffy pancakes. I used a cup of milk and then added milk little by little until I was happy with the consistency. 1.25 cups of 2% milk made for a runny batter but a good buttermilk batter. This recipe has everything that was missing from my original attempts.

I used the extra fluffy version and whipped the egg white, but still used regular whole milk. Although I think I should have folded the egg white in last, these pancakes still turned out really good. Weren't super fluffy, but good and had a very good flavor. This will probably be my new regular recipe!
