BAR-B-QUE BRISKET 
6-7 lb. brisket, well trimmed
Onion salt
Garlic salt
Celery salt
Lemon pepper
Liquid smoke
Salt
Pepper
Worcestershire sauce
Bar-b-que sauce

Generously coat brisket with first four seasonings. Shake 3 ounces of liquid smoke on top. Cover and refrigerate overnight. Next day, season with salt and pepper and 1/2 cup Worcestershire sauce. Securely seal brisket in foil and cook for 7 hours on 275 degrees. Drain off liquid and cover brisket with bottle of barb-b-que sauce. Leave uncovered and cook one more hour.
