MANICOTTI SHELLS 
5 eggs
1 1/4 c. flour
1/4 tsp. salt
1 1/4 c. water

Beat eggs. Slowly add flour and salt. Blend well. Gradually add water. Batter will be thin.

FILLING:

2 lb. ricotta
1 (12 oz.) mozzarella
1/3 c. Parmesan or Romano cheese
2 eggs
1 tsp. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper

Mix all ingredients together. Blend well with wooden spoon.
