FRIED RICE 
2 strips bacon
1/4 carrot, grated
1 med. onion, chopped
2 eggs
3 c. cold cooked rice
2 tbsp. soy sauce
Salt to taste
Juice of 1 clove garlic
1/2 box frozen green peas

Fry bacon until crisp; crumble. Cook carrot and onion in bacon drippings; remove from pan. Scramble eggs; remove from pan. Place rice in pan; add soy sauce and salt. Add frozen peas and stir until heated; return all ingredients to pan, adding garlic juice. Serve hot with additional soy sauce, if desired.
