HONEY RAISIN BARS 
3/4 c. shortening
1/2 c. sugar
1/2 c. brown sugar, firmly packed
1/2 c. honey
2 eggs
1 tsp. vanilla
1 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 tsp. nutmeg
3/4 c. quick cooking oatmeal
1 c. raisins
1/2 c. chopped walnuts, optional

Cream together shortening and sugars until light and fluffy. Beat in honey, eggs and vanilla. Blend well. Sift flour, baking soda, salt, cinnamon and nutmeg together. Gradually add dry ingredients to creamed mixture. Mix well. Stir in oats, raisins and walnuts. Spread mixture in 15 1/2 x 10 1/2 x 1 jelly roll pan which has been greased. Bake at 375 degrees for 18 to 20 minutes. Cool in pan on rack. Cut into bars. Roll in confectioners' sugar if desired.
