STUFFED APPLES 
1 c. sugar
2 c. water
2 tbsp. lemon juice
1 (8 oz.) pkg. cream cheese
1 c. nuts, chopped
3 lbs. med. apples
1 (5 oz.) bag red cinnamon candy
1 med. can crushed pineapple, drained

Combine sugar, water and cinnamon candy. Bring mixture to a boil, stirring until candy is dissolved. Add lemon juice. Peel and core apples. Add apples to cinnamon candy mixture and cook slowly on low heat until done, turning to get both sides same color. Drain on paper towels and chill. Combine cream cheese, pineapple and nuts, and then stuff apples. Place stuffed apples on lettuce leaves and sprinkle with mint leaves, if desired.
