SOY BEAN NUTS 
1 lb. dried soy beans
6 c. vegetable or peanut oil
Salt or seasoning salt or 2 tbsp. sugar and 1/2 tsp. cinnamon or soy sauce

Wash beans, drain. Cover with 10 cups of water. Soak overnight. Drain.

Place beans and 4 cups of water in pot and bring to a boil, then reduce heat and simmer 15 minutes. Drain. (Soak in 1 cup soy sauce for 2 hours; drain.)

Dry in 250 degree oven for 1 hour. Stir once or twice. Turn oven off. Leave beans in oven for several hours, or overnight. Deep fry beans in hot 350 degree oil until golden brown for 5 to 7 minutes. Season hot beans with salt or sugar and cinnamon, if you did not soak in soy sauce. Store cool beans in airtight container.
