2 medium zucchini, shredded
handful of baby spinach, chopped
1/2 large onion, shredded
1 cup Bisquick baking mix
1/2 cup grated cheese
1 cup shredded Mozzarella cheese
1/2 cup vegetable oil
1/2 tsp. salt
1/2 tsp. pepper
4 eggs

Mix all ingredients together and bake at 350°F for 35 minutes or until golden brown.
