JUMBO OATMEAL BISCUITS 
1 c. quick cooking oats, uncooked
3 c. flour
5 tsp. flour
5 tsp. baking powder
1 tsp. cinnamon
2/3 c. shortening
1/2 c. maple syrup
1 tbsp. grated orange peel

Preheat oven to 450 degrees. Set aside 1 tablespoon oats. In bowl, mix remaining oats with flour, baking powder, and cinnamon. With pastry blender or 2 knives, cut shortening in until mixture resembles coarse crumbs. Stir in maple syrup, orange peel, and 1 cup milk to form soft dough and leaves side of bowl.

On lightly floured surface, with floured hands, knead dough 10-12 times. Pat dough 1 inch thick. With 3 inch round cookie cutter, cut out biscuits. Place biscuits, about 1/2 inch apart, on ungreased large cookie sheet. Press trimmings together; pat and cut as above. Brush tops of biscuits with milk and sprinkle with reserved oats.

Bake biscuits 12-15 minutes until golden. Makes 8. 425 calories each.
