BLUEBERRY MUFFINS | |
1 egg 1/2 c. milk 1/4 c. vegetable oil 1 1/2 c. all-purpose flour 3/4 c. sugar 2 tsp. baking powder 1/2 tsp. salt 1 c. fresh or frozen blueberries Beat egg with fork and stir in milk and oil. Mix dry ingredients. Stir together with egg mixture just until flour is moistened. Batter will be lumpy. Stir in blueberries. Bake in greased muffin cups 20 to 25 minutes at 400°F. Makes 12 muffins. |
