TOMATO A LA GRECQUE 
8 sm. zucchini, scored lengthwise with fork
2/3 c. water
1 tbsp. corn oil butter
1 med. onion, chopped
1 clove garlic, chopped
4 ripe tomatoes, peeled & chopped
Salt & pepper to taste

In a large saucepan combine zucchini and water. Cook over medium heat for 6 minutes or until tender. Remove from heat; set aside.

In a medium skillet heat butter over medium heat. Add onion and garlic. Saute until tender. Add tomatoes. Cook until tender. Season with salt and pepper. Drain zucchini. On a serving plate arrange zucchini. Spoon tomato sauce over top. Makes 6-8 servings.
