CAULIFLOWER WITH EGG SAUCE | |
1 medium cauliflower 2 tbsp. butter 2 tbsp. all-purpose flour 1/4 tsp. salt dash of pepper 1/2 tsp. Worcestershire sauce 1 c. milk 2 eggs, boiled then coarsely chopped 1 c. corn flakes 2 tsp. butter, melted Remove the leaves and stalks of the cauliflower. Soak in salted water about 30 minutes. Drain and cook in boiling salted water about 20 minutes. Drain carefully. Put into greased casserole dish. Melt 2 tablespoons butter. Stir in flour and seasonings. Add milk gradually, stirring constantly. Cook until thickened. Fold in chopped boiled eggs and pour over the cauliflower. Crush corn flakes slightly. Combine with 2 teaspoons melted butter. Sprinkle over the top. Bake at 375°F for about 25 minutes or until crumbs are browned and the cauliflower is thoroughly heated. Serve at once. Makes 4 to 6 servings. Submitted by: Diane Kumor |
