WHITE BEAN SOUP 
Soak 1 pound white beans overnight. Pour off water. Cook white beans in large kettle with at least 7 cups water, 2 inches above beans. Add ham bone or pig hocks (smoked), 1 pod red pepper (if you like), 1 big onion diced, 2-3 carrots, diced. Simmer for about 3 hours over low heat until done. Can add garlic and/or dash of sugar.
