MILE-HIGH CASSEROLE | |
12 oz of Canadian bacon, (diced) 1 1/2 cups cottage cheese 1/2 cup shredded cheddar or Parmesan (or a mixture) 3 eggs 1/2 cup diced green peppers 1/2 cup diced white onions tater rounds (slightly thawed) to cover the bottom of the dish 2 tbsp. vegetable oil salt and pepper Preheat oven to 400°F. Layer tater rounds along the bottom of a 13x9x2-inch casserole dish. Next, add oil to a medium-sized frying pan and add onions when oil is hot. Sauté onions until lightly brown and then add green peppers, salt and pepper and sauté until all vegetables are lightly brown. Place sautéed vegetables on top of tater rounds, making sure to let them fall into any gaps between the rounds. Then, mix eggs, cottage cheese and shredded cheese until mixture is uniform (but lumpy of course) and spread over the potato mixture. Finally, spread diced Canadian bacon over the top, covering the egg mixture. Place dish in oven uncovered for 30-40 minutes.
