TAFFY APPLE SALAD | |
8 lg. unpeeled Delicious apples, cut in sm. slices 2 c. dry roasted peanuts, chopped 1 (16 oz.) can crushed pineapple, drained (reserve juice) 1 (8 oz.) tub Cool Whip 1 c. sugar 2 tbsp. flour Drained pineapple juice 2 beaten eggs 2 tbsp. cider vinegar Mix sugar, flour, pineapple juice, eggs, and vinegar in saucepan. Cook over medium heat until thick. Let cool. Add apples, all but 1/2 cup nuts, pineapple and Cool Whip. Mix well. Sprinkle with remaining nuts. Chill. |
