CREAMY RICE PUDDING | |
3/4 c. sugar 2 tbsp. cornstarch 1/4 tsp. salt 2 egg yolks 1/2 c. raisins 1 tbsp. butter 1 tsp. vanilla 2 c. milk 2 c. cooked rice Combine sugar, cornstarch and salt in 2 quart saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly until mixture boils and thickens, about 8 minutes. Cook 1 minute more. Remove from heat. Beat egg yolks slightly. Stir in a small amount of hot mixture into egg yolks. Immediately pour yolk mixture into pot blending thoroughly. Cook 2 more minutes over low heat, stirring constantly. Remove from heat. Stir in rice, raisins, butter and vanilla. Let stand 10 minutes. Spoon into dessert dishes or 1 large bowl. Sprinkle with nutmeg or cinnamon, optional. |
