PUMPKIN CAKE 
1 c. Wesson oil
2 c. sugar
3 eggs
2 c. cooked pumpkin
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. allspice

Mix oil, sugar and eggs, then add pumpkin. Sift dry ingredients together, add to first mixture, add vanilla. Bake in 3 (9") layer pans at 325 degrees for 50 to 60 minutes.

ICING:

1 stick butter
1 box powdered sugar
1 c. pecans, chopped
2 (3 oz.) pkgs. cream cheese
1 tsp. vanilla

Cream butter and cream cheese, add sugar then vanilla and pecans. Let cake cool before icing. You may have to add enough milk to make icing spread.
