CHICKEN CATALONE 
Flattened chicken breasts
Salt and pepper
Italian seasoning
Dijon mustard
Peanut oil, olive oil, or butter
Tomatoes, peeled, seeded or canned
White wine
Scallions
Mozzarella cheese
Flour
Mushrooms
Parsley

Season chicken breasts with salt, pepper, and Italian seasoning. Spread on mustard. Roll chicken breasts around cheese (sliced) and pinch up ends to seal. Roll in flour. Saute in oil or butter. Remove catalones to a plate. Saute scallions and mushrooms in drippings and oil (add more if needed). Add chopped tomatoes. Add catalones to sauce and parsley. Pour a little wine into the sauce.
