CHICKEN RICE WALDORF SALAD 
1 c. instant Minute Rice
1 c. water
2 tbsp. butter
1/2 tsp. salt

Bring water, salt, and butter to boil; add Minute Rice and cover. Remove from stove and let set 8-10 minutes. Then fluff with fork. Uncover and let cool.

Mix in 1 cup mayonnaise and 1 tablespoon lemon juice; add 1 large red apple (diced), 1 cup celery (diced), 1 cup seedless green grapes, 2 cups diced cooked or baked skinless chicken; chill. Chopped walnuts optional. Makes 6 servings.
