RICE PILAF 
1 c. brown and wild rice mixture, unseasoned, not instant
1/2 c. chopped celery
1 c. sliced mushrooms
1/2 c. chopped onion
1/3 c. currants
1/4 c. blanched, slivered almonds

Rinse rice. Put rice in a pot with a tight fitting lid. Bring to a boil, reduce heat, cover and simmer for 45 minutes. Do not remove lid.

While rice is cooking, microwave celery, mushrooms, and onions in small amount of water. Drain.

After 45 minutes, remove rice from heat and allow to set covered for 10 minutes. Add vegetable mixture, currants, and almonds. Mix and serve. Serves 4-6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
