SKILLET COOKIES 
3/4 c. sugar
1/2 c. butter
1 lb. dates, chopped
3 1/2 c. Rice Krispies
1 1/2 tsp. vanilla
1 egg, beaten
1 c. pecans, finely chopped
Coconut

Melt butter, then add sugar and dates. Cook over low heat until dates are melted. Add egg to mixture and cook slowly for 5 minutes, stirring constantly. Let mixture cool for 2 to 3 minutes, then add vanilla, pecans and Rice Krispies. Shape into small balls and roll in coconut. Makes 50 to 60 cookies.
