SKILLET STRAWBERRY COOKIES 
1 (8 oz.) pkg. pitted dates (snipped 1 1/3 c.)
1/2 c. flaked coconut
1/2 c. sugar
4 tbsp. butter
1 slightly beaten egg
Dash salt
1 1/2 c. crisp rice cereal
1/2 c. chopped walnuts
1 tsp. vanilla
2 jars fine red sugar crystals
1 can green decorator frosting

In skillet, combine dates, sugar, coconut, butter, egg and salt. Cook and stir over medium heat until mixture thickens and bubbles 5 to 10 minutes. Remove from heat and stir in rice cereal, chopped walnuts and vanilla. Cool 10 minutes. For each cookie use about 1 tablespoon date mixture. Form into strawberry shape. Keep fingers moist for easy shaping. Roll each cookie in red sugar and trim with green frosting leaves. Makes 2 1/2 dozen cookies.
