HEADQUARTERS CHILI | |
3 lb. lean ground beef 2 sm. green peppers, chopped 2 med. onions, thinly sliced 2 cloves garlic, crushed 1/4 tsp. Tabasco sauce 1 c. water 3 (15 oz.) cans pinto or kidney beans 1/4 c. cooking oil (optional) 3 (1 lb.) cans tomatoes 3 - 4 tbsp. chili powder 2 tsp. crushed cumin seeds or ground cumin Cook beef, green peppers, garlic and oil (optional) until beef is lightly browned. Add rest of ingredients except beans. Cover and simmer 45 minutes. Stir undrained beans. Cover and simmer 45 minutes. Makes 4 quarts. |
