SPINACH BALLS 
2 pkgs. frozen spinach
2 c. herb seasoned stuffing
2 med. onions, finely chopped
5 eggs
1 clove garlic
1 1/2 sticks butter
1/2 tsp. nutmeg (essential)
1/2 tsp. black pepper
1/2 tsp. salt
1/2 c. Parmesan cheese

Cook spinach according to package directions. Drain off all liquids. Place in a mixing bowl with 2 cups of herb seasoned stuffing and the onions.

Separately, beat the eggs. Stir into the spinach mixture, along with the clove of garlic (minced), and the nutmeg, black pepper and salt.

Stir in the butter (softened) and cheese. Chill until cold enough to shape into small balls. Place balls on baking sheet and bake in 350 degree oven for 20 to 25 minutes, until edges begin to brown.
