BAKED EGGPLANT 
1 med. eggplant
1 egg
1 sm. onion, chopped
1 tsp. salt
1 tbsp. sugar
1/2 c. bread crumbs
1 tbsp. melted butter

Dice eggplant. Cover with cold water and cook until tender. Drain and mash. Mix with other ingredients. Bake in a greased baking dish about 25 minutes at 325 degrees. Serves 4.
