BANANA BREAD 
1/2 c. butter
3/4 c. brown sugar
1 egg
1 c. unsifted whole wheat flour
1/2 c. unbleached white flour
1 tsp. baking soda
1/2 tsp. salt
1 1/4 c. mashed very ripe bananas
1/4 c. yogurt
3/4 c. chopped walnuts

Cream butter and sugar together in a large bowl. Beat in the egg. Mix flours, soda and salt in small bowl.

In separate small bowl, combine mashed bananas and yogurt, stirring only enough to mix. Add dry ingredients alternately with banana mixture to creamed mixture, stirring just enough to mix. Add 3/4 cup chopped nuts. Turn batter into greased loaf pan. Bake at 350 degrees for 50 to 60 minutes. Cool in pan for 10 minutes, remove and cool on rack.

Try sprinkling the top with cinnamon-sugar mixture before baking for a crispy top.
