CRAYFISH AND PASTA 
3 sticks butter
1 1/2 bunches shallots
1/4 c. flour
1/2 lb. tasso (Cajun smoked ham), minced
3 cloves garlic, chopped
2 lbs. crayfish
1 pt. half & half
1 lb. Velveeta cheese, cubed
1 tsp. Blackened Redfish Magic
1 lb. fettuccine noodles
Romano cheese

Melt butter, add tasso. Saute 3 to 5 minutes. Add shallots, saute 5 minutes. Add flour, blend well. Cover, cook 15 minutes. Stir, add crayfish. Cover and cook 20 minutes on low heat, stirring often. Add half and half, cheese and garlic. Cook covered for 20 minutes on low. Stir occasionally. Add cooked noodles. Combine well. Put in baking dish. Top with Romano cheese. Bake 12 minutes at 350 degrees. May be made ahead and refrigerated or frozen before baking. May need to be thinned with milk after baking.
