POTATO SALAD 
6 potatoes boiled and cubed
2 onions minced
2 shredded carrots
1/3 cup minced parsley
1/3 cup minced cilantro
3 finely chopped stalks celery
1/3 cup vinegar
1 cup mayonnaise
1 tbs course pepper
1/3 cup sweet relish
2 tsp. Stevia (healthy sugar)
1 cup chopped roasted red peppers (can be purchased in store)
2 tbsp. chopped chives
1 tsp. caraway seeds
1 tsp. celery seeds

In a large pot of water cook potatoes (halved) for 15 - 20 minutes so they are done but still a bit firm. In meantime, combine Stevia, relish, pepper, mayonnaise and vinegar and mix until it is a smooth consistency. Add balance of ingredients, except potatoes and mix well. Add potatoes and mix so potatoes are coated with sauce.

Taste and adjust seasoning, if needed. Cool in refrigerator for about 2 hours, then serve.

This is good served with picnic items such as sweet pickles, cole slaw, olives, etc.

Makes: 6-10 servings.
