POTATO TOPPED MEATLOAF 
1 (12 oz.) jar brown gravy
1 1/2 lbs. ground beef
1 c. bread crumbs
1/4 c. onion, chopped
1 egg, beaten
1/2 tsp. salt
Dash of pepper
2 1/2 c. hot mashed potatoes
1 tbsp. melted butter
Paprika

From gravy measure 1/4 cup. Combine with beef, bread crumbs, onions, egg, salt and pepper. Form into a loaf (8 x 4 x 1 1/2 inches). Put in shallow baking pan. Bake at 350 degrees for 1 hour. Remove from oven and drain fat. Spread potatoes over meatloaf. Drizzle butter and paprika on top of potatoes. Bake 20 minutes longer. Let stand 5 minutes. Heat remaining gravy and serve.

Serves 6.

I like to put cheese on top just before the potatoes.
