DIABETIC MUFFINS 
1 c. Fiber One cereal, crushed if desired
1 c. milk
1/2 c. vegetable oil
1 egg
1 1/4 c. all-purpose flour
6 pkgs. Sweet & Low
3 tbsp. baking soda
1/4 tsp. salt
1 c. raisins

Heat oven to 400 degrees. Grease muffin pans. Mix cereal and milk; let stand 5 minutes. Beat in oil and egg. Mix remaining ingredients in milk and oil. Divide into 12 muffin cups. Bake 20 or 25 minutes.

Just tried the Diabetic Muffins and they are great! Used Chocolate Fiber One cereal and my husband and I love them. A great healthy alternative to brownies or cake.
