DEEP DISH PLUM PIE 
2 lbs. (5 c.) quartered, pitted plums
3/4 c. packed brown sugar
2 tbsp. tapioca
1/4 tsp. cinnamon
Dash of salt and nutmeg

Mix all ingredients and let it stand for at least 15 minutes. Pour into a baking dish or a 9-inch pie shell. Dot with butter. Place pie crust on top. Bake at 375 degrees for 40 to 45 minutes. Serve warm with vanilla ice cream.
