HALLOWEEN PUMPKIN COOKIES 
2 1/2 c. flour
1/2 tsp. salt
1/4 tsp. ginger
1/4 tsp. nutmeg
1 tbsp. baking powder
1 c. raisins
1/2 c. chopped nuts
1/2 c. shortening
1 c. sugar
2 eggs, well beaten
1 c. cooked mashed pumpkin
1/2 tsp. lemon extract
1 tsp. vanilla

Cream shortening and sugar until light and fluffy. Add eggs, pumpkin and flavorings. Sift together flour, salt, ginger, nutmeg and baking powder. Add to shortening mixture. Stir in raisins and nuts. Mix well.

Drop by teaspoonfuls on greased cookie sheet. Bake 12 to 15 minutes in 375 degree oven. Yield: 6 dozen cookies.
