PUMPKIN SPICE DROP COOKIES 
1 cup shortening
2 cups brown sugar
2 eggs
1/2 cup cold coffee
3 1/2 cups all-purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/4 tsp. ginger
1 (15 oz.) can pumpkin pie filling
1 cup raisins
1/4 cup chopped walnuts

In a large bowl, cream shortening and brown sugar. Add eggs and mix well. Blend well flour, baking soda, salt, nutmeg, cinnamon and ginger. Stir coffee and dry ingredients into shortening mixture. Add pie filling, raisins and nuts. Mix thoroughly. Refrigerate 1 hour.

Drop by teaspoons onto greased cookie sheet.

Bake at 375°F for 12 to 15 minutes.
